Less is more, or life's little pleasures.

We try to cram so much into our lives, believing we have little time to get it all in. When we take vacations, they should be to relax, site see, maybe enjoy a show; but no, we bunch up activities to the point of exhaustion. Then we return to our homes and jobs, and wish for a vacation from our vacation.

Every day we should take some time to enjoy a simple pleasure. Buy a favorite candy bar, eat it bite by bite and savor each taste of it. Wrap yourself up in a warm quilt, and enjoy a long movie without worrying about the chores that need doing. They'll be there whether you've watched the movie or not; so putting it off, to enjoy a little time with yourself, won't hurt anyone.

Same with making meals; don't do the complicated if all you want is something simple.

Chunky Tomato Bisque

Ingredients:

2 (26 oz)cans of tomato soup
1 (14.5 oz) can diced tomatoes
1/4 tsp ground black pepper
1 cup heavy whipping cream

Preparation:

In a large saucepan, mix together tomato soup and diced tomatoes; bring to boil on high heat. Reduce heat to low; stir in black pepper and cream; let simmer for 5 minutes.

Makes 6 servings.

How simple and delicious is that? Serve with cheesy crackers, or even have a grilled cheese sandwich with a steaming bowl.
